Dry, linear Riesling from the granite soils around Murrumbateman. Hand-picked fruit, gentle whole-bunch pressing and a cool stainless-steel ferment keep it precise and citrus-driven. Expect lime, lemon zest and green apple, hints of jasmine and chalky minerality. Crisp acidity, light body, long, dry finish.
Serve with: oysters, sushi, fresh goat’s cheese, Vietnamese salads.
