Shiraz from the elevated vineyards around Young. Deep purple fruit—blackberry, plum—framed by spice and a touch of dark chocolate. Fermented in open vats; matured in French oak for around a year (mostly older barrels) to keep it fragrant and supple. Medium body, fine tannins, clean finish.
Serve with: grilled lamb, burgers, hard cheeses.
Tech style: 100% Shiraz; open ferment; French oak maturation; minimal new oak.
