2019 Mitchelton Aer 115 Single Vineyard Pinot Noir
The 2019 AER 115 Pinot Noir has a compelling bouquet of layered red and black fruits with a hint of clove and dried rose petals. The medium bodied palate unveil dark red fruit flavours along with precise, fine tannins and a pure line of acidity. Integrated and complex oak aromatics and structure provides the finishing touches as it builds to a powerful finish. While it can be enjoyed now, it will require cellaring to reach its full potential over the next 10 – 15 years.

Winemaking
Hand picked and destemmed while keeping the berries whole into 3 tonne open fermenters. A small percentage of whole bunch was added to the fermenter. A cold soak of 5 days with daily pump overs before primary ferment commenced. During the peak of alcoholic fermentation the open fermenters where hand plunged 3 times daily before being pressed off skins after 24 days. Racked to barrel for MLF and a 11 month maturation of which 40% was new French oak.
