Tiny-lot Pinot made from select cool sites, crafted with a light touch. Hand-picked, partial whole-bunch for aromatic lift, wild yeast where possible, and maturation in older French barriques to keep fruit front and centre. Red cherry and cranberry, subtle rose and forest floor; fine, chalky tannins and bright acidity.
Serve with: salmon, roast chicken, charcuterie.
Tech style: 100% Pinot Noir; small open ferments; older French oak; minimal fining/filtration.
