Madame Coco sourced from the cool-climate Aude Valley, nestled in the foothills of the Pyrenees, a region with a sparkling wine tradition that dates back to the 16th century—more than a century before Champagne. Blended by Hilde Chevillot with Florence Schurr, it is an expressive, approachable wine, perfect as an aperitif.
Primarily composed of Chardonnay (85%), which imparts remarkable depth and length to sparkling wines, with indigenous Mauzac (5%) and Chenin Blanc(10%) adding elegance and a fine mineral acidity.
Tasting Notes
Lemon citrus and floral notes. The palate is very fresh and lively with crisp tropical and citrus flavour.
Winemaking
Hand harvested before whole bunch pressing and cool fermentation in stainless steel. Secondary fermentation using Charmat method over five months ensuring maximum freshness and fruit expression.
